Dian Hong (滇红) from Fengqing county, Yunnan, where the large-leaf varietal has grown for centuries and where Dian Hong was first made in 1939. Large leaf gives black tea a natural sweetness and body you don’t find in smaller-leaf varieties — full, warm and forgiving to brew.
Tropic Gold is our everyday Dian Hong, selected for a clean malt backbone, natural honey sweetness and consistency at volume. This is the loose leaf behind the sachet: the same tea, sold by the 100 g bag for pitchers, urns and batch brewers.
Hot-brewed tea poured over ice carries all the tannins the heat pulled out, and dilution doesn’t fix it. Flash chilling — brewing at double strength and pouring straight onto ice — arrests the extraction before the tannins build. Cold brew starts cold and stays there: the sweetest, lightest cup, but Dian Hong’s warmth is part of its character, so we recommend flash chilling for this tea.
Whole leaf matters more in volume, not less. Broken leaf brews fast and bitter in a batch; whole leaf gives a clear, bright pitcher that holds for a service.
Brew strong, chill fast. For a hot cup, the guide’s Western numbers apply.

An equal weight of ice. The sudden drop keeps it clear and bright instead of harsh.
Makes about a litre. Scale the same ratio for an urn; ask us for the brewer recipe.
Two to three grams — about a heaped teaspoon of whole leaf — per 200 ml cup.
85–95 °C. Dian Hong forgives a heavy hand; it is the time you watch.
Longer if you like it bold. Gongfu numbers are in the guide.
