The tea plant flowers once a year, in autumn. In Menghai county, Yunnan, the small white blossoms of Camellia sinensis are picked by hand, dried and kept whole. It is not a flavoured tea or a herbal blend — it is the flower of tea itself, and it carries no caffeine, because the plant concentrates its caffeine in the leaf, not the flower.
The cup pours pale gold and clear: light, soft and gently sweet, with a faint floral note that is clean rather than perfumed. It does not have the depth of a brewed leaf, and it doesn’t try to. It is the evening cup on a menu that otherwise stays inside the world of real tea.
Finding a caffeine-free option that meets the same standard as our tea line is harder than it sounds. Most tisanes have nothing to do with Camellia sinensis. The tea flower grows on the plant we already source from, needs no added flavouring, and fits a single-origin approach.
For a hotel it answers the request every bar gets after nine o’clock — something warm, without caffeine, that isn’t a peppermint bag.
Skip the boiling water. It flattens the delicate florals; a little cooler keeps the character of the flower.

Or to your strength. The flowers give a pale gold, clear cup. Longer makes it rounder, not bitter.
