The tea

勐海 月光白

Yueguang Bai (月光白), Moonlight White, blurs the line between Fujian white tea and pu’er. It uses the large-leaf Yunnan varietal usually reserved for pu’er and black tea, withered indoors away from direct sun — slower and gentler than a Fujian white, which is why the leaf comes out two-toned, dark on top and silver beneath, with more body than most whites.

This is our 2019 harvest, stored in Menghai county since. Time has softened the fresh florals and deepened the profile: where young Moonlight White is fruity and floral, the aged tea takes on warmth, a gentle earthiness and a woody complexity that builds with each steep. Aged white tea in a sachet is rare — we packed it this way so a hotel can pour a cup with a year and a place on it.

Why aged, not fresh

Fresh white tea is floral and gentle. Kept three years or more it develops an earthier, woodier profile with the flowers still underneath — it ages a little like a pu’er. Neither is the better tea; they are different chapters of the same leaf. For a menu, the aged chapter is the one with depth to spare after a long steep.

The other reason: aged white is forgiving. Delicate, long-leaf, naturally low in tannin, and hard to over-brew. It is the tea we reach for when the cup is going to sit.

How to brew

Hot cup

Aged white takes heat well. Water just off the boil, and let it go a full three minutes.

Temperature

Sachet in, water on

Hotter than you'd use for a fresh white — 90 °C to boiling. Aged leaf wants it.

Give it three minutes

The cup pours pale gold. Peach, honey and hay first; the wood arrives as it cools.

Steep it again

Aged white keeps giving. A second cup from the same sachet is softer, not weaker.
